Pressure Canners and Mushrooms

Pressure canners give long life to mushrooms. This is because canning is the best way to preserve mushrooms in order to enjoy the taste of this fantastic produce all year round. But how can pressure canners preserve your mushrooms? Here are a few details regarding pressure canners.

Method of Canning Mushrooms

Most people are aware that the canning process can be done at home quite easily. This part of the article summarizes the method for canning mushrooms.

Before going into the procedure, it is important to note the requirements. The following are the things needed to can mushrooms:

This is the method for canning. Mushrooms can be canned whole or sliced. The first step in canning is washing. Before washing, all the pieces must be examined thoroughly and only brightly colored, small or medium-sized mushrooms should be selected. The Ones with shorter stems and unopened caps are good and there should be no discoloration. Soak the selected pieces in cold water for about ten minutes and then wash them.

After washing is done, soak the pieces in water and boil for five minutes in a saucepan. Now, put the hot mushroom pieces in canning jars leaving a one-inch space at the top. Add a half-teaspoon of salt and 1/8 teaspoon of ascorbic acid to the canning jars. Now, add seals to the jars and tighten them.

The pressure canner must contain five centimeters of pre-boiled water before placing the canning jars into it. Place all the sealed canning jars into the canner and close the lid. Now, turn the heat to high. Wait until white steam is produced. When the white steam is seen, vent for ten minutes and then add weight in order to bring the pressure to 11 lbs. Leave it like this for 45 minutes.

Turn off the heat after 45 minutes and wait until the pressure is back to zero in the gauge. Now, remove the weight and again wait for five minutes before opening the lid. Remove the contents from the canner and cool the canning jars by placing them on a cloth-covered bench overnight. Mushrooms that are canned in this way can be stored up to twelve months if they are placed in a cool, dry place.

The canner is not only useful in preparing mushrooms for storage but also in cultivation. When we want to do mushroom farming, our primary goal will be to get the mycelium to colonize the substrates as soon as possible. However, it should be remembered that the mushroom substrates will contain several contaminants which could spoil the growth of the target species. Therefore it is essential to sterilize the substrate before starting off in order to kill any harmful contaminants. The sterilization process may seem harder until a person understands that it is basically the same as canning.
