CMC is used in ice creams to form a uniform, smooth and stable mixture of fats, water and protein, which greatly reduces the production cost. In beverages, the cellulose gum is used to prevent layering and precipitation, which improves the taste. It is an excellent water retention agent, tablet base, emulsifier and an adhesive.
