Rainbow Nerds Cake

Rainbow Nerds are a bright and colourful way to decorate any cake, but they can also be used to brighten up a cake for a birthday or special occasion. The dots of colour can be complemented with Rainbow Straps, so that even if you lack decorating confidence, you can make an attractive cake that will impress your family and friends.

Ingredients:

175 grams of caster sugar

210 grams of flour

Two teaspoons baking powder

2 eggs

Two teaspoons vanilla extract

Two tablespoons of milk

110 grams of softened unsalted butter

30 grams of Wonka Rainbow Nerds

Method:

Preheat your oven to 170ºc and prepare a 20 centimetre cake pan, by greasing it lightly.

In a large bowl beat the butter and sugar until it is creamy and light. Add in the each of the eggs, beating well to incorporate after each one. Stir in the vanilla before sifting in the baking powder and flour. Add the milk and mix until smooth. Fold in the Rainbow Nerds so they are well distributed. Pour into the prepared tin and bake for approximately thirty minutes.

If you prefer, you can make this mixture into cupcakes. These can be made by spooning the batter into cake liners and baking for approximately twenty minutes. Check the centre of your cake or cupcakes with a skewer to ensure that it comes out clean and they are properly baked.

Decorating:

Allow your cake to completely cool on a wire rack before attempting decorating. Even if you lack decorating confidence, you can still use buttercream and Rainbow Nerds to make your cake look stunning. A basic buttercream just requires you beating 140 gram of unsalted butter with 450 grams of icing sugar. Add the sugar a little at a time to avoid a sugar cloud. If the mixture becomes a little too stiff, just add a tablespoon of milk. You can also flavour your buttercream with a little vanilla extract. Spread the buttercream over the top and sides of your cake. Before the buttercream dries, press in your decorations. You can use Rainbow Straps to create a pattern or press in handfuls of Rainbow Nerds. If you are feeling particularly creative, you could sort the Nerds into different colours to create a pattern. Your imagination is the only limit to how you decorate your cake.

You can highlight the bright, bold colours by using a primary coloured cake board or serving plate. You could also accessorise your cake with a bright ribbon, and this can also be used to cover any less than perfect buttercream icing. Of course, for a birthday cake, you can also accessorise with rainbow birthday candles and decorations. Store your nerds cake in an airtight tin in the fridge for up to three days.
