Peppermint Humbugs Brownie Bites
Most of us remember peppermint humbugs, but thanks to the movies and books a new generation have been introduced to peppermint humbugs. Harry Potter and his friends seemed to always have some of these deliciously minty sweets on hand in all of their adventures. While you may not be ready to go out and battle Voldemort, you can enjoy a magical treat in the form of these Peppermint Humbugs Brownie Bites.
Ingredients:
120 grams of unsalted butter
250 grams of caster sugar
100 grams good quality cocoa powder
Pinch of salt
- teaspoon peppermint extract
Two eggs
75 grams flour
24 chocolate mint creams
Crushed peppermint humbugs
Method:
Preheat your oven to 160ºc and line a miniature brownie pan.
In a saucepan heat the sugar, butter, salt and cocoa powder, until it is melted and well combined. This should be melted over a low to medium heat, do not allow your mixture to boil. Take the pan from the stove and allow it to cool.
Once your cocoa mixture is room temperature, stir in the extract and add the eggs, beating well after each egg. Your batter should now be thick and shiny, so fold in the flour until it is all incorporated.
Spoon the batter into the paper liners. Bake your brownie bites for approximately fifteen minutes. Before the bites are fully baked, remove them from the oven and place one of the chocolate mint creams into the top of each of the brownies. Push the sweet into the brownie, so it is covered and sprinkle the brownie tops with the crushed peppermint humbugs.
Allow your brownie bites to cool before serving.
Alternatives:
If a bite is not enough to satisfy your sweet tooth, you can use this recipe to make a tray of brownies. The preparation for this is the same as the brownie bites. Instead of spooning the batter into mini liners, pour the batter into a shallow brownie tin. When you need to add the chocolate mint creams, just dot them around the top of the brownies. Then playfully scatter the top of the brownies with the crushed humbugs. This will not yield the same individual surprise of gooey chocolate mint inside each bite, but your brownies will still have that scrumptious chocolatey mint goodness.
For the ultimate chocoholic treat, you can also drizzle your brownies with melted white or dark chocolate.
These brownie bites make an attractive treat for any special occasion. Even a birthday party spread will be brightened with a plate of these brownies playfully stacked taking centre stage.
