MASALA DOSA RECIPE:
Ingredients For The Dosa:
2 cups rice1 cup skinless split black lentils( Urad Dal)1 tsp Chana dal/ Bengal gram- tsp fenugreek seeds (Methi)
1 cup of flattened rice (Poha)1 cup cooked ricesalt to tastewater as requiredoil for applying on dosa'sFor the potato masala filling:
3-4 potatoes1 tbsp oil1 tsp mustard seeds1 tsp cumin seeds4-5 green chillies finely chopped4-5 curry leaves2 cups chopped onionssalt - to taste1 tbsp. coriander leaves finely choppedINSTRUCTIONS FOR MAKING THE PERFECT MASALA DOSA
For The Dosa Batter:
Making the Dosa requires little preparation. First the ingredients needs to be soaked well & later after blending it to a paste, it needs to be kept overnight to ferment well.Firstly, wash the rice and Urad dal well. To it add fenugreek seeds, Chana dal & Flattened rice, add good amount of water and soak it for about 6-7 hours/ overnight.Drain out the soaked water from all the ingredients.Blend all the mixed ingredients into a fine paste/batter by adding very little water if required.Mix the whole batter well.Allow the batter to ferment overnight.Next day to the batter, add salt and mix well.Check the batter consistency.Batter should not be too thick nor too thin.For Making The Potato Filling:Firstly, boil the potatoes in water by adding salt.Peel off the potato skin and mash the boiled potatoes.In a separate pan, add oil and heat it.Add the mustard seeds, cumin seeds and allow it to splutter.Add green chillies, add curry leaves and let them crackle.Add diced onions and sauté till onions become soft.Add salt, turmeric powder and mix well.Add the mashed potatoes, mix well and cook for a minute.Lastly, add the chopped coriander leaves and keep it aside to fill in the Dosa.Masala Dosa preparation recipe:Pour a ladleful of the batter on it and spread it in a circular motion thin circle.Also smear a little oi/ butter over it.Cover the Dosa for a while and cook till the bottom of Dosa turns golden brown.Further spread a spoonful of the potato fillings at the centre of Dosa.Then roll the Dosa along with masala.finally, serve immediately with coconut chutney and sambar.The author of this article is a South Indian born & hence his interest for South Indian cuisines.
