It is a highly flavoured specialty malt and is produced using a drum roaster when germinated, kiln-dried barley is roasted at high temperature but for a relatively short roasting time to develop the unique toasted, warm bread, biscuit, and especially nutty flavours and aromas characteristic. Biscuit malts have no enzymatic action and hence are non diastatic in nature due to the high temperatures applied during roasting.

Ingredients - 125 g unsalted butter, 1 tsp of Biscuit Confectionery malt extract, 3 tbsp of golden syrup, 125 g caster sugar, 1 medium free range egg, 350 of plain, all purpose flour, 50 g malted milk powder from barley malt extract manufacturers, 1/2 tsp of bicarbonate of soda
Now it's time to bake!
Steps to follow
First, Preheat your oven. Then beat together butter, sugar and malt extract liquid or liquid malt extract in a large bowl. Next add the syrup to the mixture, and beat. Then add the flour, malted milk powder and bicarbonate of soda and mix them thoroughly so that it can come all together as one large ball. Divide the dough into equal parts and then put one piece between two sheets of greaseproof paper. Now use a rolling pin, roll the dough until you get the enough thickness. Then remove the paper and cut the biscuit in whatever shape you like. Place the cut pieces in the baking tray, and repeat with the remaining dough, Bake for around 10-12 minutes then cool.
