Vegetables are highly healthy foods. They contain a lot of nutrients, vitamins, proteins, a wide class of essential nutrients and a lot of anti oxidants. Therefore, they need to make up the greatest part of our daily food. Especially Indian cuisine is predominantly vegetarian and makes use of vegetables in abundance. To begin with, let us take the class of leaves used to garnish food. There are three most important kind of leaves we use in Indian cuisine namely curry leaves, coriander leaves and mint leaves. You call curry leaves in Hindi as Cadipetta. Whereas, you would say Dhaniya for coriander leaves. The Hindi name of mint leaves is Pudina. These three are excellent in therms of their medicinal properties. In addition, they help in digestion of food and are also a rich source of vitamins, minerals and iron. If you come across a few of them in your food, do not throw them. They shall really help you a lot.

There are a few commonly used vegetables found in daily cooking across Indian cuisines. Onion and tomato are very extensively used for a variety of dishes. You call onion Pyaz in Hindi, whereas, tomato is known as Tamatar. The other kind of most popular vegetables known to all people across the country include carrot called as Gajar, beetroot known as Chukander, ladies finger addressed as Bhindi, radish popularly called as Mooli in Hindi. Potato is a very important vegetable for Indians extensively used for a variety of preparations including curries, samosa, chips, fries and others. Potato is called Aloo in Hindi. Brinjal and drumstick are highly tasty and also popularly known vegetables across India. They are called Baingan and Sahjan respectively in Hindi. Mango is called as Kacha Aam in Hindi.

Cluster beans is called in Hindi as Gavar. You need to say Phoolgobi while asking for cauliflower from the vegetable vendor. Peas is known by the name Mutter in Hindi. You would call gooseberry as Aam in Hindi. Lemon is called as Nimbu and coconut is called as Narial. You say Sooran to indicate Yam.

Let us now turn to spicy vegetables. Green chilly is extensively used in Indian culinary tradition to give a hot taste to dishes. It is called Hari Mich in Hindi, hari meaning green. Ginger is an excellent kind of tuber that is endowed with amazing kind of medicinal properties. You call it Adarak in Hindi while you would say Lashun for indicating garlic that is again a fantastic and tasty underground plant product. Capsicum is one of the varieties of green chilli and it is known as Shimla Mirch in Hindi, probably addressing the vegetable by its origin.

It is interesting to know how the gourd variety of vegetables are called in Hindi. Snake gourd is called as Karela, Bottle gourd is called Lauki and you need to call Ash gourd in Hindi as Petha. While you would call snake gourd as Pdwal, you need to say Tori for ridge gourd.
