Create Great Party Food with Rainbow Cupcakes

While there are plenty of different flavour combinations, rainbow cupcakes are always a real hit and with some decorative touches such as TNT Rainbow Straps, you can create an attractive and tasty treat.

TNT sour straps ingredients to Make 12 Cupcakes:

100 grams of plain flour

140 grams of caster sugar

20 grams of cocoa powder

1 ½ teaspoons baking powder

40 grams room temperature unsalted butter

120 millilitres of milk (whole dairy or nut)

1 egg

  • teaspoon vanilla extract

Pinch of salt

For the Frosting:

175 grams of softened unsalted butter

225 grams of sifted icing sugar

  • teaspoon vanilla extract

Method:

Line a cupcake tray with paper muffin cases and preheat your oven to 170c.

Sift the cocoa powder, flour, salt and baking powder and mix in with the butter and sugar until everything is well combined. Whisk the egg, vanilla extract and milk in a separate bowl or jug. Add to the flour and butter mixture and slowly beat in until the mixture is smooth and creamy.

Spoon into the paper cases until they are ¾ full. Bake for twenty to twenty-five minutes until a skewer comes out clean. Allow the cupcakes to cool slightly while in the tray before you allow them to cool completely on a wire rack.

To decorate, whisk the butter and icing sugar together until smooth and creamy. Beat in the vanilla extract. You can use a pallet knife to spread the frosting on top of each cupcake or pipe it into fluffy clouds. If you are feeling particularly artistic, you can create a blue sky with coloured frosting before piping on your clouds.

Cut several TNT Rainbow Straps into pieces three or four centimetres long. Curve the strap into a rainbow and mount it on the cupcake using the frosting. Allow the cupcakes to chill and allow the butter icing to set. Just remember not to stack the cupcakes for the display as you may crush your rainbow and ruin the whole effect.
