Look! Three Kinds of Hydrolases Acting on Carbohydrates

Hydrolase is a general term for a class of enzymes that catalyze the hydrolysis reaction. This kind of enzyme includes many types. Different types function different functions. This article is used to focus on enzymes that mainly act on carbohydrates. They are invertase enzymes, enzyme glucoamylase and pepsin enzyme.

Invertase enzymes

Description: invertase enzymes are belonging to Candida sp., which is a parasite inside the animal's host. Invertase enzyme is to catalyze the hydrolysis of sucrose. And then the inverted sugar syrup, the resulting mixture of fructose and glucose, is produced. Related to invertases are sucrases. Invertases and sucrases hydrolyze sucrose to provide the same mixture of glucose and fructose.

Application: invertase enzymes are mainly applied to enzymatic determination of saccharose and the structure investigation of carbohydrates with ß-D-fructofuranoside residue.

Specificity: although this enzyme can hydrolyze saccharose and raffinose, it is not used to hydrolyze inulin and melezitose.

Enzyme glucoamylase

Description: enzyme glucoamylase (glucan 1,4-alpha-glucosidase) is known as an enzyme located on the brush border of the small intestine with a system name---4-alpha-D-glucan glucohydrolase. This enzyme works well on the following chemical reaction: Hydrolysis of terminal (1->4.-linked alpha-D-glucose residues successively from non-reducing ends of the chains with release of beta-D-glucose. Most forms of the enzyme can hydrolyse 1,6-alpha-D-glycosidic bonds rapidly.

Application: enzyme glucoamylase is also acting on carbohydrates, but the difference is focusing on the structural investigation of carbohydrates. What’s more, it also useful for enzymatic determination of?-amylase, when it is coupled with the related enzymes in clinical analysis.

Specificity: this enzyme can only completely hydrolyze soluble starch, glycogen, amylopectin and panose.

Pepsin enzyme

Description: pepsin enzymes, one of the principal proteins, which degrading or proteolytic enzymes in the digestive system, acts on the complex dietary protein and breaks up into peptides and amino acids. These peptides and amino acids can be absorbed by the intestinal lining. Pepsin is also helpful in digestive disturbance in general and as a result of impaired production of gastric juice. In the treatment of anemic conditions, pepsin enzyme acts as an adjunct, especially during slimming diet when protein intake increases.

Application/specifity: the pepsin enzyme is mainly working on the digestive system.

These enzymes are now getting more and more important in lab use for catalyzation. And hydrolases are also regarded as the important medium for many chemical reactions.
