How To Make Delicious Mouth Watering Pickles Or Achar?

Achar masala is used to make Pickles or Achar; these are savory dishes made by fermenting vegetables and used as taste enhancers with meal. These are savory, tangy and spicy dishes which are beneficial for health too and acidic in nature. In India the use of pickles is more than 4000 years old, initially Cucumber was used to make pickles and it was easiest way to preserve food to eat during off-season and during long distance journeys. Almost any vegetable can be preserved with the process of pickling, some popularly used vegetables as pickles are Mango, Lemon, Green Chili, Indian Gooseberry, Red Chili, Garlic, Cucumber, Carrot and Cauliflower.

Pickle mixture or Achar Masala is determining factor for taste and nature of pickle, the end product can be made spicier or sweeter by changing the ingredients which are added to the vegetable during fermentation process. Some even prepare Pickle of fruits which are also delectable cuisines. Pickles can be classified by the process of making, and their main ingredient. There is quick process of making pickle or fresh pickle, fermented pickle, refrigerated pickle, fruit pickle and relishes. Any of these methods can be used to make mouth-watering pickles to enhance taste of the meal.

To make Achar masala at home and turn any vegetable into fresh pickle just follow these simple steps. Take ½ cup Red Chili powder, ¼ teaspoon Turmeric powder, ½ cup Fenugreek seeds, 12 Black Peppercorns, ½ teaspoon Mustard seeds, ¼ teaspoon Asafetida, ¼ cup Salt, 2 tablespoon of Olive oil and two whole Red chili. Dry roast Fenugreek seeds in a fry pan and when completely roasted let them cool down, grind them coarsely ideally with Mortar-pestle and keep them aside. Heat oil in a pan, when completely hot, add Mustard seeds, Asafetida, Black peppercorns and whole Red Chilies.

Do not add Red chili powder to hot oil as it will burn the powder and oil will change its color. Take the pan off the flame and let the mixture cool down a bit but not completely cool. Add Turmeric, Red Chili powder and Salt with coarsely grounded Fenugreek seeds and mix them well. Add this mixture to sufficiently warm oil mixture and stir to mix all the ingredients completely. Let the mixture cool down completely and transfer it into a Glass jar for future use. You can make Mango, Lemon, Carrot, Tindora and Green Beans pickle any time with this mixture.
