A Kolkata Delicacy - Phulkapir Singara Or Bengali Samosa

A renowned snack from north India, is popular across the country. Samosa is known as Singara in Kolkata. Here, we are sharing a Kolkata style Phulkaphir Singara or Bengali Samosa which is made up with cauliflower, some veggies and typical masalas.
Ingredients Required:-
For External Layer:-
- Plain flour (Maida) - 1 Cup- Wheat Flour (Atta) - ½ Cup- Salt - A Pinch- Ghee or Oil - 3 Tsp- Baking Powder - ½ Tsp- Water - As required
For Internal Filling:-
- Cauliflower (Small Peices) - ½ Small Cauliflower- Potato (Small Pieces) - 1 (Medium Sized)- Frozen Peas - A handful- Tomato (Chopped) - 1 (Medium Sized)- Green Chillies (Chopped) - 3 to 4- Ginger (Crushed) - 1"- Turmeric Powder - ½ Tsp- Cumin Powder - ½ Tsp- Coriander Powder - ½ Tsp- Red Chilli Powder - ½ Tsp- Peanuts - 12 - 15 Pieces- Fenugreek Seeds - A Pinch- Fennel Seeds - A Pinch- Mustard Seeds - A Pinch- Kalonji - A Pinch- Cumin Seeds - A Pinch- Salt & Sugar - As per Taste- Oil - For Frying
For Bhaja Masala (Dry roast these all ingredients and then grind them without water):-
- Cumin Seeds, Coriander Seeds - ½ Tsp- Red Chili - 2 to 3
Instructions :-
For Dough:-
1. In a large bowl add atta, plain flour, baking powder, salt and mix all of them together and make a soft and smooth dough using water. Keep the dough aside for 20 minutes after cover with a cloth.
For Filling:-
1. Take a Pan and heat the oil, then add peanuts and fry until they become dark brown. Once done, then keep them aside.2) Now in a pan, again heat little oil and add ingredients like Fenugreek seeds, Fennel seeds, Mustard seeds, Kalonji, Cumin seeds and saute them for few seconds. 3) Then add Tomatoes, potatoes and cauliflower and continue to saute for few seconds.4) Time to add all dry masala Powder along with salt and sugar. Then cover with a lid and cook the vegetables.5) Once the veggies are cooked, add bhaja Masala and fried peanuts into the mixture. Mix them well and put off the flame.
Final Process:-
1. Divide the dough into 4 equal portions and roll out one portion into a flat thicken circle. 2) Cut down the circle into the half and make a cone-shaped samosa with a semicircle.3) Put the prepared stuffing into the samosa and seal the edges using water. 4) Take enough oil into a kadhai and fry all the samosa’s until golden brown.5) Serve Hot.
