Sesame oil, obtained from Sesame seeds ((Sesamum indicum L.), has a long historical background. Known to humankind from past thousand years, Sesame oil is being used till date over a vast geographical extent. The Sesame plant, native to Asia and Africa, is primarily cultivated in India, China, Australia, Africa, and Latin America. Widely used in Southeast Asian and South Indian cuisines, its color ranges from transparent to golden and to dark brown.

Sesame oil is considered to be the most stable plant oil and is least prone to rancidity and has a long shelf life when stored in a cool dark place away from light and heat. Sesame oil is a rich source of minerals like copper, manganese, magnesium, calcium, phosphorus, iron, zinc, molybdenum, and selenium.
