Lacto Fermentation

Lacto fermentation, which is also called Lactic acid fermentation is an ancient method of food preservation. This technique has been prevelant in almost all the cultures of the world best rooftop restaurant in Udaipur. As the name suggests there is fermentation involved in this. However, in this case the fermenation is caused by bacteria not yeast. Bacteria in absense of oxygen feed on the complex carbohydrates present in the food materials and produce cabon di oxide and lactic acid. The presence of acid increases the ph of food. Higher level of ph doen’t allow food spoiling microbes to thrive and food stays edible for longer. There are various types of bacteria responsible for Lacto fermentation but the major one is Lactobacillus. It is the same bacteria which is present in yoghurt, curd, fermented vegetables and fruits. Across the globe few common examples of lacto fermented food are – kimchi, miso, achaar, pickled vegetables, cheeses, kefir, kombucha and salami.

How it is done?

Lacto fermentation- the name sounds daunting but the process is pretty simple. Submerge the choice of vegetables or fruits in salt solution. For milk based food, the culture of bacteria has to be added in the food. And the next step is to be patiente and just wait for the microbes to do their work.

Few simple care has to be taken. One has to make sure that the food material is completely submerged in liquid so that oxygen is not available and the jars and utensils that are used are sterelised. As far as water is concerned, using purified water is better. If tap water is used then the chlorine has to be removed from the water. To remove chlorine, water can be boiled and cooled down or left exposed to air for atlest 12 hours in a shallow container.
