The Story Behind Chrissoulas

Chef brothers Nick and Theo Dimitriou grew up in the kitchens under the culinary influence of their Yiayia (Greek for grandmother). Chef Nick confessed that their grandmother is the reason why they love food so much that they dreamed of building a restaurant to call their own. Their dream finally came true and named it after their grandmother’s first name, Chrissoulas.
Chefs Nick and Theo Dimitriou have combined over 20 years of experience in the culinary industry. They live and breathe the F&B life from front of house, to back of house, to people management. They both received their culinary degrees together from one of the top ten leading culinary schools in Chicago: Kendall College.
Chef Nick started his culinary journey working in front of house in various North Shore restaurants. A few years after, he rekindled his passion and found his way back to the kitchen. He worked at Philly G’s in Lincolnshire for over 8 years as their executive chef. In addition to managing Chrissoulas, he recently opened KnightHawk Burger Bistro.
The other brother, Chef Theo, began his culinary story as a line cook in Westmoreland Country Club in Wilmette, IL. He made his way to the kitchens in downtown Chicago. He reigned the kitchens of San Diego’s leading French Bistro and crêpery as their executive chef before he joined his brother, Nick, to open Chrissoulas.
Chef Theo loves to bake pastries like Bougatsa it is a kind of sweet pie (less sweet if you consider Greek standard) made of phyllo pastry & semolina custard. This is a kind of food that tastes good in daytime, delicious at late night and best enjoyed with pleasant memories. If you want to eat this pie from roadside food court you will also get a sprinkle of powder sugar and cinnamon on top. The taste of bougatsa varies between regions of Greece. For example, bougatsa in Veria is very sweet and full of cream, while in Thessaloniki it is crunchy and not that sweet.
