In retort packaging, the food or beverage is first filled in the pouch or metal can, sealed, and then heated to a high temperature, thereby sterilizing the product. Whereas, in aseptic processing, the food or beverage is sterilized by exposure to ultra-high heat, rapidly cooled to ambient temperature, and filled into sterilized containers, which are then sealed in a commercially sterile environment. However, the assembled aseptic package is not further processed, as seen in the case of retort packaging. With the rise in the demand for convenience products and ready-to-eat food, the aseptic processing market has witnessed significant growth. Rapid urbanization and the need to maintain a healthy lifestyle by avoiding the consumption of food additives have led to an increase in the demand for aseptic processing.
