Ingredients for Cupcakes:

To make cupcakes, you need 8-10 strawberries (you can use either fresh or frozen) and 3 eggs. Moreover, you need 250g of all-purpose flour, ¼ cup of cornstarch, 2 ½ tablespoons of baking powder, and ½ tablespoon of salt. You also need ¾ cup of unsalted butter, 1 ½ cup of sugar, 2-3 tablespoon of vanilla extract, and 1 cup of whole milk.

Ingredients to Make Frosting:

To make frosting, you need 1 cup of frozen strawberries, 1 cup of unsalted butter, and 4 cups of confectioners’ sugar. Additionally, you need 3 tablespoons of heavy cream, 1 teaspoon of vanilla extract, and a pinch of salt.

Directions:Step 1: Preheat the Oven:

The first thing you need to do is to preheat the oven to 350°F. And then place cupcake liners in the muffin pan.

Step 2: Blend and Chop:

Blend slices of 5 strawberries in the blender or food processor and make a puree. Put it aside and finely chop the rest of the strawberries.

Step 3: Beat the Egg Whites:

Separate 3 egg white. Use a mixer with a whisk attachment and beat the egg whites until soft peaks form. You will need approximately 2 to 3 minutes for this.

Step 4: Make the Cup Cakes:

Take a large bowl and add flour, salt, baking powder, and cornstarch in it. In another bowl, beat the butter for about 1 minute or until you get smooth and creamy butter. Then add sugar in the butter and continue beating for 4-5 minutes on high speed. Then add egg yolk along with pure vanilla extract and continue whipping. Then add dry ingredients and whole milk.

After that, add strawberry puree, egg white, and chopped strawberries into the batter. Then spoon slightly thick batter into cupcake liners and bake for 20 minutes. You can also check the cupcakes by inserting a toothpick in the center. After baking, let the cupcakes cool at room temperature.

Step 5: Make the Frosting:

Using a blender, make a powder of freeze-dried strawberries. Then beat the butter for about 2 minutes and add sugar, powdered strawberries, vanilla extract, and cream in it. Mix all the ingredients for 3 minutes. You can also add a pinch of salt if you don’t like too sweat frosting. There are different frosting methods like swirl, dome and rosette.
