Ages ago, non alcoholic beer was created by boiling ethanol. The people belonging to that era were happy with the thought of drinking this 0 alcohol beer. But it was later that they realised how excessive boiling destroyed the flavours and aromas of the beer.

Now as we walk on the path of development, there are several new found techniques which help in production of craft beers that are alcohol free. These processes involve arrested fermentation, low heat and less grain. Also, by adapting these techniques many new flavours and aromas are found for non alcoholic beer.

The Making Of Non Alcoholic Beer:
  • There is no major difference seen in the making of alcoholic and non alcoholic beer. Both of these go through the same process and steps like mashing and boiling the wort, blending and fermentation etc. The only difference for most non alcoholic beers lies in the fact that the beer needs to be heated.

  • When the beer is allowed to heat for a long time, the alcohol content in it starts evaporating. And this is what changes the taste of the fermented beer. In order to keep the flavour intact, many breweries use vacuum distillation. By using caum, the billing point can be lowered down and this way the beer reaches a limited warm temperature. This way the flavour doesn't change but the alcohol content can be reduced.

  • Now that we have come a long way with this vacuum distillation process, brewers have found many other ways to remove alcohol content from the beer. One of these techniques is reverse osmosis. Through this beer gets pushed to pass through a filter. This filter is said to have small holes that let water, alcohol and few volatile acids pass through. Once the alcoholic beer passes through this filter, alcohol and water mixture is attained which can be further distilled by using standard distillation.

  • The process is not completed here. When the non alcoholic drinks undergo reverse osmosis, a syrup of sugar, flavors and ingredients sit on the other side of the filter. After the alcohol is distilled from the water, that same water and acids are allowed to mix with the syrup sitting on the other side of the filter. Please note that none of the steps involves heating yet all the flavours remain intacct. Hence the resulting beer has more natural flavours and aroma. The process might be time consuming but the results are fruitful.

  • Non alcoholic beers are different yet the brewer injects carbon dioxide in the bottle, can or the container that beer is in, for keeping away the flat and monotonous vibe from the beer.

  • Many manufacturers try to make beer more authentic or create gluten free beers. They might make use of extra sugar or starter yeast to make the beer ferment. This way the beer gets carbonated much easily and needs no injection of carbon dioxide later. But it also gives rise to increased levels of alcohol. Please note that if this step is done incorrectly, it can lead to explosion of the bottles.
