You can’t talk about Filipino recipes without mentioning the iconic Filipino spaghetti. You’ve probably already had it, either from a children’s party or from Jollibee. And it might’ve been peculiar at first; you come in expecting a meaty, savory bolognese type pasta. But after a twirl and a bite, you’re taste buds are punched with a weirdly sweet, tomato-y sauce—and are those red hotdogs? Yes, they are.

What is Filipino Spaghetti?

Filipino spaghetti is a popular pasta dish from the Philippines. It’s basically a meat sauce plus pasta served together, as are most pasta dishes. But Filipino spaghetti sauce leans towards the sweeter flavor spectrum, thanks to a mix of tomato products, sugar, and other sweetening ingredients. It still has beef, as well as sliced red hotdogs, though, giving it a meaty profile and some savoriness to balance everything out.

Instead, the pasta is cooked separately, and the sauce is served on the side; everyone is then encouraged to pour as much sauce as they want on their plate of cooked spaghetti.

To make the sauce, add oil to a large pan over medium heat and saute 1 whole diced red onion. The onion gives the sauce a bit of freshness and a bite; it’s best to use red onion here because it can stand everything else that’s going on in the sauce. Add the beef and cook until well browned before adding sliced hotdogs and cooking for another five minutes.

The simplest way to make Filipino spaghetti is to simply use a pre-made, store-bought tomato sauce. But this can lack some nuance, so many people customize the sauce by adding either tomato paste, banana ketchup, or both. This recipe uses both. Make a well in the center of the pot then add the tomato paste, making sure to cook it on the pan to remove its bitter aftertaste. Stir the paste into the beef and hotdogs, then add tomato sauce and banana ketchup.

Let the mixture come to a boil before seasoning with soy sauce, sugar, black pepper, and salt. Bring the sauce down to a simmer and cook until thickened, which should be about 15 minutes. Remove from the heat and serve alongside cooked spaghetti.
