Uses of Olive Oil -

Crushing the Olives and Lampante -

But they can also be used for the local consumption. The apparatus, which is used for crushing the olive oil, varies from roman presses consisting of a conical stone worked by the mule or hand to modern hydraulic presses. In order to ensure that the olive oil is free from the fatty acids, it is very important to remove the best quality edible oil from the pulp quickly. After pressing the olives for the first time, next you have to press the residual pulp again with hot water and in the second time the oil that is obtained has high acid content. The oil along with inferior virgin oil becomes or is called lampante because it is used as a fuel in the lamps. Further, there is a need to refine the lampante to remove the color, acid, and odor and then it is sold as a refined olive oil.
