Gluten is a protein found in the flour that is made from wheat.

Gluten intolerance is well documented and presents itself as feelings of discomfort, of feeling bloated – even pain that can last for days. Some gluten levels are even worse than others and are referred to as so-called "strong/hard" gluten, which needs to be avoided.

And, in addition to finding buckwheat from a supplier or retailer, you may well enjoy more health benefits if this buckwheat is organically grown. Therefore, once you have decided to make the switch to gluten-free noodles, you may want to look at shops and food sources that specify they market wheat- and gluten-free noodles and produce organically grown. It hardly gets better than this.

Also, it is not as if there are not many choices available for the person that wants to switch to a gluten-free diet. Think of all the gluten-free noodles you can buy these days, such as, say, brown and black rice noodles, Thai rice noodles and Vermicelli noodles among the various choices.

A good starting point may be to realize that organically grown soba noodles may have various positive implications for one’s health, as opposed to products made from wheat flour.
