Champagne Bollinger Special Cuvee is undoubtedly one of the finest French Champagnes, the Bollinger style is distinguished by its full-bodied aromatic character derived from a high proportion of Pinot Noir and original oak. From the vineyard to the bottling, the Special Cuvée undergoes such a level of care and special attention that it is difficult to classify it as non-classic or indeed in any Champagne. Quality

Bollinger is the producer most associated with a single grape variety in Champagne, which is Pinot Noir. This harder-to-grow grape makes up at least 60% of Bollinger's total Champagne. The harmony of richness and elegance of Pinot Noir plays an important role in the distinctive structure of the Special Cuvée, the ripe red berries and the power of impact create a clear signature. Then another association made Bollinger famous: the unity in the barrels.

Bollinger persisted in overseeing fermentation barrel by barrel for all vintage Champagnes and a remarkable 30% of Special Cuvée as virtually every Champagne producer in the latter half of the twentieth century moved to ferment in large lots in stainless steel tanks. Why? Because the flavour development becomes more complex, and the texture becomes rounder and silkier. The ageing of Champagnes is a third Bollinger speciality. Most Champagnes on the market are primarily composed of the most recently harvested vintage before ageing in the bottle.

How They Are Shaped?

Bollinger is primarily composed of Champagnes from previous vintages, and a newly released bottle of Bollinger is approximately 7-8 years old. The use of Reserve Magnums is a fourth - and unique - practice at Bollinger. The best vineyards will be aged under cork in magnum for up to 15 years before being hand disgorged into the final blend to bring out the aromas and flavours that only a great aged Champagne can display, including truffles, ginger, and walnut.

From Where Its Name Is Derived?

In 1911, Georges Bollinger's British agent gave him the idea of ​​​​the name Special Cuvée - "special" written in English, without accents. He considers the French expression "Brut sans ane" unworthy of such special champagne. More than a hundred years later, Bollinger's non-classical Champagne name still stands for its know-how and distinctiveness.

Vineyard

85% of the Special Cuvée grapes come from a combination of Grand Cru and Premier Cru villages. Bollinger vineyards are the source of more than 60% of its production, at least as required by quality charters enacted several decades ago. In addition, Bollinger obtained a "High Environmental Value" certification in 2012.

The Procedure

30% Special Cuvée is cleaned in used 228-litre oak barrels, with some 400-litre casks aged up to 40 years. This commitment to traditional winemaking is central to Bollinger, and they are the only Champagne producer left with an employee in charge. The wines are then aged for 30 to 36 months with the final blend made up of 50% of the reserve wines and 5 to 10% of the total blend made up of the reserve wines of the highest calibre. Wines aged from 5 to 15 years are kept in a bottle soaked under a cork. This rather unique and laborious process (each magnum is hand-blended) results in wines with diverse aromas and flavours, and an unparalleled texture. The dosage is about 8-9 grams per litre.
