Crisp Grilled Cheese Sandwich

Mouthwatering cheesy delight, crisp grilled sandwich is truly the American comfort food.

Serves: 4

Prep time: 15 minutes

Cooking time: 10 minutes

Ingredients:

8 slices Texas toast or other thick slices white bread

8 tablespoon unsalted butter

1 cup finely grated parmesan cheese

2 cups grated sharp cheddar cheese

Recipe:

Spread butter on each side of the bread. Cook along all four slices in a skillet over medium heat till they turn light golden. Sprinkle ½ cup Parmesan over the slices and then flip over the slices. On the toasted side of bread, sprinkle 1 cup cheddar and cook until it begins to melt and Parmesan begins to brown and crisp.

Once the cheddar melts, turn 2 slices on the other 2 and press together to make a sandwich. Transfer them on a cutting board and allow them to rest for a minute then cut in half and serve with tomato ketchup.

Stir-fried Vegetables

Quick, tasty and full of goodness, Stir-fried vegetables is easy to make and holds a part in every Asian cooking.

Serves: 2

Prep time: 15 minutes

Cooking time: 10 minutes

Ingredients:

1 clove garlic, crushed

1 red chilli, thinly sliced

3 spring onion, thinly sliced

1 small red onion, thinly sliced

1 handful mangetout, shredded

Few shitake mushrooms, sliced

1 handful green cabbage, finely sliced

Few water chestnuts, sliced

Olive oil

Sea salt, freshly ground black pepper

2 teaspoon soy sauce

1 teaspoon sesame oil

Sesame seeds, to garnish

Recipe:

Mix the garlic, chilli, spring and red onion together. In another bowl mix all the vegetables and water chestnut together.

Heat the wok till it’s hot and add a splash of olive oil. Add the chilli and onion mix stir once and add the vegetable mix. Keep the vegetables moving and add salt and pepper. The vegetables will begin to soften in two minutes and then add sesame oil and soy sauce. Give it a toss and transfer it to a serving dish. Sprinkle sesame seeds and your stir-fried vegetables are ready to eat.

Scotch Eggs

Runny in the middle and crispy on the outside, just dig in these soft, crunchy and meaty Scotch Eggs.

Serves: 8

Prep time: 10 m

Cooking time: 35 minutes

Ingredients:

10 large eggs, 2 beaten

800 g sausage meat

1 small bunch fresh chives, parsley, finely chopped

1 whole nutmeg

1 tablespoon English mustard

Sea salt, freshly ground black pepper

Plain flour, for dusting

150 g bread crumbs

Vegetable oil for frying

Recipe:

Boil 8 eggs and when cool, peel them. Mix the sausage meat in a bowl with herbs, nutmeg, mustard, salt and pepper and divide them in to 8 balls.

Keep three plates ready, one with flour, one with beaten egg and the last with breadcrumbs. Dust your hands with flour, flatten the sausage ball, roll a peeled egg in flour and pop it in the middle of the pattie. Gently shape the meat around the egg. Roll it in flour, then beaten egg and lastly bread crumbs.

Heat the oil in a deep pan till it is ready to fry. Carefully lower the eggs in to the pan and cook on each side for about 4 minutes until golden. Remove and drain the excess oil on a kitchen paper. Serve the eggs with a piece of Scottish cheddar and pickled onions.
