Ingredients:- 240 gm Paneer
- Curry leaves, cashew nut paste, mustard oil, mustard seeds
- For marination: garlic paste, extra virgin olive oil, red chili powder, yellow chili powder, cheese cubes, ground cardamom, fennel seeds powder, mint, green chili, ginger paste, lemon juice, hung curd, garam masala powder, dry red chili, fresh cream, white pepper powder, coriander leaves, salt
- Marinate paneer with salt, lemon juice, olive oil, ginger, and garlic paste.
- Divide paneer into three parts for different colored marinades: saffron, white, and green.
- Marinate paneer pieces in each colored marinade and let sit for 30 minutes to an hour.
- Roast paneer in a tandoor and serve with mint chutney.
Spinach and carrot-filled rolls wrapped in whole wheat rotis.
Ingredients:- 1 cup whole wheat flour
- 1/2 cup spinach leaves (pureed)
- 1 green chili, cumin powder, salt, olive oil
- 150 gm paneer, 2 green chilies, 2-3 garlic cloves, 1 finely chopped onion, finely chopped coriander, 1 finely chopped tomato, turmeric powder
- Puree spinach with green chili and mix with wheat flour, cumin powder, and salt to make dough.
- Cook thin palak parathas.
- Prepare paneer bhurji filling with listed ingredients.
- Add sauce and paneer bhurji to each paratha, roll, and serve.
