Once the berries develop into a deep red color they are picked individually and harvested. They are de-pulped and the beans inside them are cleaned of flesh. The flesh from these beans is utilized as fertilizer and the beans cleaned, processed, and fermented in water and then dried. It’s the fermentation that gives your steaming coffee cup, that typical coffee flavor and aroma.

The soaked beans are air and sun dried during day time and kept covered at night. Coffee that is made under controlled conditions and is prepared within high standards can be called the best coffee. Sanitation is extremely important and the trees need to stay healthy and the beans need to be properly washed and processed – this is the key to great tasting coffee.

You can carry out a "coffee check". Take a sharp knife and slit the bean through and through in the middle. Too much moisture will show and too dry a bean will crack rapidly. It’s the bean that does not split away instantly that is your "chosen coffee bean". Once the parchment covering the bean is removed you can sniff it for the zest. These beans are cleaned of skin, roasted and ground and then used.
