My mother makes the best apple pie. I remember as a kid watching in awe as she mixed and rolled the ingredients. Friends would ask her to bring her pie to bakes sales, pot lucks, and anytime they wanted dessert. Everyone loves my mother’s apple pie. This time, it is my turn to make apple pie for my mother. I’m looking for an easy recipe for apple pie because I don’t have a lot of time. I want something similar to my mother’s recipe but a little different so that it doesn’t look like I’m trying to make her type of pie. I really want to impress my family so the search is on for an easy recipe.

While searching online I come across a recipe that claims to be easy. As I scan over the ingredients and directions I see that it sounds delicious. The recipe I found is versatile. I can either buy store bought pie crust or I can make my own. My mother will know if I bought the crust, so I’m making it myself.

All I need is vegetable shortening, water, a little butter and a little salt, and of course, flour. The recipe also says that I can use apple pie filling from a can or I can peel my own apples and cook down a filling. Because I’m trying to impress my mother, I decide to cook my own apples. I peel, core, and slice the apples and let them slowly cook down with a bit of cinnamon, sugar, water, and a pinch of salt.

The easy recipe for apple pie is a bit different. I’ll actually be making mini apple pies which are perfect for the dinner party. Once I have all of my components, the crust and the filling, I follow the rest of the directions. I roll out my dough into a circle. Next, the recipe calls for spreading caramel sauce onto the crust. This is the part that will set my pie apart from my mothers. Then, place filling onto the caramel sauce. The next part is a little more time consuming but not difficult. I have to roll out the top crust and then slice it into strips, lay the strips onto the apples and then use a large cookie cutter to cut out mini apple pies. It looks like I did it right so I sprinkle the tops with a pinch of cinnamon and sugar and pop them into the oven.

The mini apple pies came out perfectly. They’re golden and the crust is flaky. I can’t believe I found an easy recipe for apple pie that I think my family is going to love. The recipe is just different enough from my mother’s recipe so it won’t look like I’m trying to copy her. I think that I have elevated apple pie to a new plateau thanks to a great mini apple pie recipe.
