Cooking Carrot Halwa or Gajar halwa or Carrot pudding can be nostalgic. It is the sweetest gesture that would remind you all the events or occasions you may had it earlier. One spoon of generously made Carrot Halwa (Grated carrots, milk, sugar and nuts are stirred and cooked together) will relax your mind & excite your senses.

Not only does it improve the vision, it also slows down the ageing and gives a natural glow to your skin. Cooking this favourite sweet is an art in itself. It requires choosing juiciest and tender orange carrots straight from the market into your kitchen. You’ve got to be little patient in cooking as it is a slow cooking process to be made with great love. It is all worth the wait as not only does it taste better and is nutritiously superior.
TIPS TO MAKE BEST CARROT HALWA RECIPE
Always use hand-picked fresh red carrots to make this delicious Gajar Halwa.
Be very generous in grating carrots as it almost comes down to half during the cooking process.
Only grate the carrots to medium thickness, else the thinly grated carrots will make the halwa mushy & soggy.
Do not directly fry the grated carrot in Ghee rather cook it with milk & later when the milk reduces fry in ghee.
Keep stirring the halwa at regular intervals, else it may burn.
You can freeze the halwa for 1-2 months. Just transfer it in a freezer safe box and freeze. Thaw before using and warm in microwave.
Quick Cooking process:
To make delicious carrot halwa, first wash, peel, and grate the carrots, and chop the pistachios & almonds & crush the cardamom seeds for garnishing. Add the grated carrot & slowly add the milk & cook it for some time till it reduces to half. To it add desi ghee and cook it for sometime. you can smell it. Lower the heat and simmer for 1 hour. Finally, add the sugar, raisins, and saffron, add the cardamom, and cook it for 20 minutes.
