Many people are intimidated by the thought of trying new recipes and learning new ways to cook, but cooking can be fun if you know what you are doing. If you follow the tips in this article, you will be on your way to cooking gourmet food in your home kitchen.

Mushrooms discolor fast and they don't look too appetizing when you serve them. You can prevent discoloration by following this technique. Squeeze the juice of a quarter lemon onto a paper towel and wipe the cap of each mushroom with it. This cleans the mushroom and prevents it from changing its original color.

You can save a lot of money by buying potatoes for your favorite dishes in larger quantities. Make sure you store them in a cool dark place (preferably in a root cellar). Place them in a crate loosely and keep the storage temperature between 45 and 50 degrees F. Avoid storing them in the refrigerator as they become sweet.

Take the guesswork out of reducing liquids. When a recipe calls for you to cook until the liquid is reduced by a certain amount, dip the handle of a wooden spoon into the liquid to mark the depth. This will leave a line on the wooden spoon. Later, you can dip the spoon again to see how much the liquid has actually reduced.

When your pasta is done and you are finished draining, pour some Parmesan cheese on top, which will give your sauce something to latch on to. This will make things much easier for you when you are creating your meal and allow you to layer the levels of your pasta.

Store your cheese in the fridge, wrapped tightly in plastic, and away from air. This will help to keep mold away. While a little mold is not harmful to cheese, excessive mold is dangerous to consume. It will certainly affect the quality of your cheese as well.

Having trouble with your meats sticking to your pan or grill? This is an easy thing to fix. Just spray your pan or grill with a spray oil before you begin to cook. This will put a coating on the surface of the pan or grill, and will keep your meats from sticking to a dry surface.

When a recipe calls for vegetable shortening, coconut oil is a healthy alternative that should be used. Coconut oil can be difficult to find in the typical grocery stores so you may need to look in a healthfood store to find it. It is important to read the label to make sure it is true coconut oil.

Make sure you season your meat and fish evenly. Sprinkle your salt and pepper over the food as though it is snowing. This will make it so you avoid clumping and avoid having parts of the meat without any seasoning. This will make for a tastier meal.

If you want a creative and efficient way to store your sauces, pour them in ice cube trays and leave them to freeze. That way you can choose how many cubes you need to make the right amount of a particular sauce, dinner or soup, plus they can be easily reheated.

Cook small quantities of food at higher temperatures for a lesser amount of time. Bite-size cookies only need a few minutes in the oven if you put it a higher temperature because there is only a small surface area to cover and it will not take long to cook. This way you will be able to enjoy your meal in minutes.

When shopping for meat, always get the freshest cuts available. If you are shopping for meat at the butcher shop the meat is being fresh cut or ground. However, when shopping at the grocery store try to find out when the store typically cuts meat for the day and try to arrive near that time. Otherwise ask at the meat counter for a fresh cut or grind if you do not know the time of the last cut.

When you are making mashed potatoes, you need to be extra careful and make sure not to whip them for too long. While it might seem that mixing them for longer would make them smoother, it actually has an opposite effect. Doing so actually makes them come out gummy in texture.

When you cook a steak you should prevent yourself from moving it around on the pan. By not moving the steak you allow it to get a crusty, sear quality that gives the steak a level of toughness on the outside; most steak eaters generally prefer the seared quality when compared to a homogenous inside and outside.

As was stated in the beginning of this article, cooking gourmet food at home is really just a matter of proper education and practice. Anyone can cook tasty, healthy food if they can follow directions. Apply the tips in this article and soon you will be known as the neighborhood's gourmet chef.
