Delicious Gluten-Free Pasta Recipes To Make This Easter!

With Easter just around the corner, many families are getting ready
to throw big family gatherings and gorge on delicious foods. And just
because you or someone in your family is gluten intolerant or gluten
sensitive, it doesn’t mean having to miss out on yummy and hearty means
such as Italian cuisine!
Here are the best gluten-free pasta recipes you can cook for family and friends this Easter!

known as "pretty Easter pasta pie", this mouth-watering dish features
layers of delicious ingredients such as pea, mushrooms, ham and gooey
cheese. This dish is traditionally eaten on il lunedi dell’angelo, also
known as "Angel’s Monday", which is the national holiday the day after
Easter in Italy.
Ingredients -
- Crushed garlic x 1 tablespoon
- Soy milk x 2 cups (warmed)
- Onion x 1 (peeled and finely diced)
- Mozzarella cheese x 300 grams (shredded or grated)
- Gluten-free rice crumbs x ¼ cup
- Sea salt x ½ teaspoon
- Organic extra olive oil x 3 tablespoons
- Gluten-free plain flour x ¼ cup
- Brown mushrooms x 300 grams (washed and thinly sliced)
- Butter x 7 tablespoons (unsalted)
- Frozen peas x 200 grams
- Beef stock x ½ cup (salt-reduced and gluten-free)
- Ham x 200 grams (thinly cut into strips)
- Parmesan cheese x ½ cup (grated)
- Pancetta x 50 grams (finely diced)
- Gluten-free brown rice spaghetti x 1 packet
Method -
- Begin by adding 1 tablespoon of olive oil into a small pan and placing it over a medium to high heat.
- Add in the pancetta with the onion and saute them for around 5 minutes until the onion has become soft and translucent.
- Then add in the peas with ¼ cup of water. Cook for another 5 minutes until the peas have become tender.
- Transfer it into a bowl and put aside.
- Add 2 tablespoons of olive oil into the same pan and turn the heat up to high.
- Once
the oil is hot enough, add in the crushed garlic with the mushrooms and
cook until tender, which should be around 2 minutes.
- Place aside in a separate bowl.
- Turn
your oven on to 175 degrees Celsius and then brush the butter over a 20
to 23cm springform pan. Then dust the bottom with the rice crumbs.
- Melt 4 tablespoons of butter into the small pan while stirring in the flour until it has become smooth.
- Add the soy milk and let it come to a boil.
- Stir until the sauce becomes thick and then place it aside.
- Cook the pasta according to the back of the packet and then toss the pasta and stock together in the pot.
- Cover the bottom of the pan with the past until covered.
- Now layer in some of the bechamel sauce, some of the parmesan cheese, peas, mozzarella cheese, ham and mushrooms.
- Finish with the remaining pasta, bechamel and rice crumbs.
- Place in the oven for 25 minutes so the pie turns golden!

put together when entertaining.
Ingredients -
- Sea salt x ½ teaspoon
- Organic extra virgin olive oil x 1 tablespoon
- Black pepper x ½ teaspoon
- Baby spinach x 140 grams (fresh)
- Onion x 1 (peeled and chopped)
- Organic diced tomatoes x 1 & ½ cups
- Beef mince x 220 grams
- Oregano x ¾ teaspoon (dried)
- Mozzarella cheese x 1 cup
- Chicken stock x 1 & ¼ cup (unsalted)
- Gluten-free penne pasta x 1 packet
Method -
- Turn your oven on to 180 degrees Celsius. Then line a rectangular baking dish with baking paper.
- Place a large frying pan on medium to high heat and add in the olive oil.
- Once the pan is hot, add in the onion and cook it for around 2 to 3 minutes until it has become translucent and soft.
- Now add in the oregano and beef mince. Cook for 3 to 4 minutes and break the mince down with a wooden spoon.
- Add in the gluten-free pasta, the salt, the pepper, the chicken stock and the diced tomatoes.
- Cover with a lid and turn the heat down to medium-low.
- Let it simmer for around 13 minutes until the pasta is cooked.
- Remove the lid, add in the spinach leaves and then give it a good stir.
- Turn off the heat and then transfer the mixture into the baking tray.
- Sprinkle over the tray with mozzarella cheese.
- Place the baking tray in the oven and let it bake for about 10 minutes or until the cheese has become melted and golden.
- Remove from the oven and allow to cool for a couple of minutes before serving.
- Serve onto a plate and garnish with a light sprinkle of some extra cheese.
