Spices have natural protective structure so that they can preserve their flavor and whole spices can remain the same for few years and provide the same flavor when you ground them. On the other hand ground spices do not remain potent for so long but are still good for use up to a year if stored properly. Thus if you want to retain flavors of your spices then it is important to properly store them.

Proper Storage

a) Keep them cool and dry: As per ground spices manufacturers the first and basic thing you will have to do is store them in a cool and dry place. Avoid places close to sources of high heat or near a dishwasher where humidity levels will normally be high.

In addition to it, keep the containers at some distance from the outside wall. Make sure the relative humidity (RH) is not more than 60% and the temperature does not move beyond 68 degrees Fahrenheit.

b) Cold storage: According to ground spices manufacturers it is a lot better to keep Indian spices in cold storage in the 32F – 45F range, specially the capsicums such as red pepper and the paprika. Cold storage is advisable for spices in which odor as well as volatile oils are considered to be necessary attributes like in case of cloves, parsley flakes and dill.

The other benefit of cold storage is that is provides protection from infestation as well as rancidity for fixed oils (present in poppy seeds and sesame).

c) Away from Light: Many of the Indian spices have light sensitivity and as such they should be protected from exposure to florescent light as well as sunlight. Some such spices include the parsley flakes, paprika, many of the green herbs and chives.

b) Airtight Containers: Always try to make use of airtight containers and store them in a dark place away from light. Air tight containers will make sure any type of humidity stays away from your product and they remain fresh for longer duration.

Ways to Preserve Spices

1. To preserve the flavors keep the lid of the container tightly closed as you finish using it.

2. Try to avoid using any wet spoon for taking out the ground spices since it can lead to buildup of dampness and spoil the substance.

3. Every now and then open up the containers and check for freshness.
