But when you heat it up, it has an unbelievably dark, smooth, rich flavor that doesn’t knock you over in sweetness. Savor it, sip by sip, in Café Anglina’s lovely tearoom adjacent to the Louvre, complete with waitresses dressed as French maids.   • clair—The humble éclair is something fantastic when baked by Stohrer, a bakery that has been in business since the 1730s—The founder, Nicolas Stohrer, was the pastry chef to Louis XV). Try their coffee-flavored éclairs, filled with the richest cream and icing you’ve ever tasted in an éclair.
